I think you were dissapointed in the 090 that didn't work out, and even though you want to try the 1056 in another year... I'm guessing you couldn't resist and you are growing up a batch of 1056.

I like 34/70. And FWIW, it seems to make good lager even fermented in the low-mid 60s. BigPapaG did it, said it worked good for him, so I tried last year and it worked nicely for me too. I did still pitch at lager rates, even though I fermented warmer that time. I don't remember if BigPapaG pitched...

That'll work! I mostly use Pils... It's a great base for many styles... Although I like Munich and Marris Otter as well... And I do a lot of 3 gallon PM's using my oven to hold temps... Me? I'ld add more late hops as it cools just to punch up the hop presence... But that's me wanting more hops. :lol...

If I might... (Check for changes, as I had to check temps etc. and make edits...) Lacto beers are great because you don't need dedicated sour gear.... WHAT???? That's right! You only need a temp controller and heat source ( hot plate, reptile heater, heating jacket, brew belt, electric boil pot, etc...

While Blend #11 seems to add up to 99.84%, respectably close to 100%...
Blend #10 only adds up to 92.86%... About 7% less than 100%...
