1 packet of classic wine yeast.
It's been a WEEK NOW, I love the BREWDEMON. I do notice I have to give it a shake every Morning to keep the bubbler working.

I assume by "bubbler" you mwan the airlock?
If so, you don't need to give anything a shake to keep it working.
Its job is to keep the outside air out of the fermenter. It does that whether there are any bubbles pr not. When you're shaking the fermenter to make bubbles conve ot, all you're doing is getting co2 ot of suspension sooner than it would on its own. It's really not necessary.
Having said that, I totally understand wanting to see some visible indication that something is happening.
When I brew, I just ignore it until it's time to keg (or bottle before I had a kegging system).
