Ribs!

I'm in the middle of barbecuing a rack of spare ribs. About 3 hours in, and they're looking good, and smelling even better. I would have preferred baby back ribs, but they were out of them, so it was either a full pork shoulder for pulled pork or spare ribs. I did feel like doing all the extra work shredding the pork, so ribs it is.

I'm looking forward to dinner tonight!

Mmmm...that sounds good. Do you trim the "knuckles" off when you do spares, or just leave them as is? I think they call it St Louis style when they are trimmed?

BlackDuck, I've never done spare ribs before, so I just left them as-is. I wasn't looking for anything other than an opportunity to 'cue, anyway. Work is kicking my butt -- this is the only day off I'm getting for two weeks. (I worked six days last week, and I'm working six days this week. Then, blessed vacation) So I just wanted to do something for myself after feeling like I was doing everything for someone else.

I usually do baby backs too. They seem to be easier to eat than the spares. You'll see what I mean by the "knuckles" after you start gnawing on them. It's like a piece of cartilage at the end of each bone.

Sounds awesome. We're smoking a rib loin now. Should be ready in a few more hours. The outside smell went from good wort to smoked meat. Summers are nice sometimes.
Then the skies opened and it poured which was good as it cooled me down while I cleaned my equipment.

Nice, Paul! Good barbecue is a wonderful thing. I'm expecting my ribs to be done around 7:00. A late dinner is worth waiting for, though!

I also had ribs tonight for dinner. Baby Back ribs slow cooked for 3 hours! Man were they good! I hope yours were as good as mine!

Washed them down with an Wild Spirit IPA! :fedora:

My corns not ready to grill yet... may not be... eff'n racoons tearing the poop out of them. But, we had baby back ribs tonight... got to love them!!

I did some BBQ tonight as well except I didn't do ribs, I did tri-tip. Unfortunately ran out of propane with about 5 minutes left to cook. I did ribs once about 2 years ago and what an interesting result that was. Haven't tried since.
