OK I did one last night and used up my wheat, so from here on out they will be all barley.
Last night I used the 'cover the water till it boils' option. Got it to boil after only 20 minutes, then did the half covered with wort boil. Worked much better. (Thx Mashani)
This one was .5lb light DME, 1 lb wheat DME, 2.8lb light LME added after flame out. Boiled 2 oz of Hallertau for 20+ minutes and pitched rehydrated bell saison. Got an OG of 1.074.
I am using Beersmith 2 and I just can not hit the estimated OG. I forget what it was but I am over it. I must be losing some water somewhere. Also I noticed a really weird thing in BS2. If I checked the box on the LME that said I added it after the boil, my IBU's went from like 20 to 50. What is up with that? No way 2oz Hallertau for 20 minutes is going to give 50ibu. Anyway using BS has been interesting, but weird stuff like that makes me wonder if it is too AG for me.
Anyway another one in the pipeline. Got to order more belle saison yeast, only have 3 more and I need 8 total, so I need 2 more. Also I hope I have enough DME, because I am boiling 1 lb -ish of DME for the hops and topping off with light LME. Somewhere in there I am going to go 'Super Saison' and throw in a lb of honey in a batch. Bwahaha!
I know it isn't AG, but I am having a ball doing these small 1 gal hop boils and then finishing it up with LME. My target is about 3-ish lbs of malt depending on what I got. I imagine towards the end, I will even need to start in on the darker DMEs. Hmm.. a black saison, the style guide just flew out the window.
