I'd put the black one in a corner for a while too, it will probably get better. That DuPont "Monks Stout" I picked up was a challenging beer. I didn't hate it, but it was like a dry irish stout except *way more dry* - so dry that the roasted grains came across almost like charcoal and smoke. And some bubble gum on top.

Yep it is in storage for maybe next fall. I have enough other saisons.

I am thinking of trying an experiment with US-05 at 75F The package says that is in range, and that is where the fermentation chamber is set. I looked up Blonde Ale in BeerSmith, and it works great with the smashes. I thought I would duplicate the Saaz Saison, only with us-05 yeast.

Of course, I am doing another Palisade SMaSH to go with the blonde ale.

What are you using with it? I have used 05 several times, it works fast after the initial 24 hours, than really takes off with activity.

This would be just a smash with 2.5 lbs of light dme and saaz for 15 minutes or so. Then US-05.

I think your IBUs will actually come in lower, you said 15 mins for Saaz, but your calculations call for 25 min. It may come in slightly lower

HaHa Be careful. I really like that yeast. Makes great tasting beer and is really easy to use. Watch your OG, cause it ain't nothing to make some of that there high gravity beer with this. I mean a 1.048 will get you a 5% beer easy.

OK Just did the Sorachi Red Eye Rye Saison. (snowed in so no basil, ;()

Sorry, I didn't see you asked about the rye.

If the rye malt extract you used was Briess stuff, next time I'd just use it as 100% or close to 100% of the bill if you really want to really taste the rye. It's 70% 2 row, 20% rye, 10% 20L crystal (I think). It does taste nice with Sorachi hops too.

If you are willing to do a partial mash of just a little bit of 2-row and rye malt (or a full BIAB mash), you can throw in some flaked rye. That kicks up the rye flavor.

Yep it was Briess. Ok, so now I know. Well it will have a little rye in it. I used 1 lb of light DME, 12 oz of rye and 8 oz of munich. And the steep of 1 lb of Carared. Well maybe it will be a bit red-ish.

Hey I hope so. Actually I need to bottle the first of the second set, so that will free up a LBK for another try at the rye saison. This time a SMaDH, all rye liquid malt (since it is already diluted) and sorachi and citra hops. 1/3 oz each for 11 minutes.

That should be tasty. And I think use up the last of my Belle Saison yeast.
