I know. If you were fishing, I'm sure you would have said something like "send me one and I'll tell you if it's too sweet and over carbed".

I guess I forgot to update this one. I started drinking this over this past weekend. First off, it's not nearly as sweet as I thought it was going to be AND it's not over carbed. So the two things I was worried about are non issues. It turned out pretty good. I adjusted the hop schedule slightly from the first time I brewed this, and now I know I shouldn't have. I am getting a little too much of the centennial hops for my liking. It's still a decent pale ale, just a little different than the first time, and not exactly what I was shooting for. So next time, I'll go back to the exact hop schedule with just a slight change it the aroma addition. I'll update this again real soon with a picture of the pour.

It's finally brew day again. And I'm going to get this one going again. In my previous post I mentioned that it wasn't exactly what I was shooting for, well, I never did update it. Because after a little aging, it turned out to be a nice pale ale. I'll do this again today, but I did have to adjust the hop amounts because the AA acids were different than when I brewed it last. No biggie, the IBU's dropped slightly, but I think that will actually turn out to be a good thing. Time to get the brewery ready to go.

Would be a great day to brew here....gonna hit 70 today,.
I need to go back and brew some of my recipes I liked. I keep trying something new and should work on improving them.

What a great way to start off this years brewing season. I finally hit/beat my predicted OG. I adjusted a few things that I think may have helped tremendously. The recipe predicted 1.054 and I hit 1.058.
First, I adjusted down my mash ratio from 1.5 to 1.25, which in the end gave me more water to sparge with. My thinking here would be that with more water to sparge with, I would do a better job rinsing all that sugary goodness off the grains.
Second, I fly sparged with water at 180F. For my system, I heat the water to 180 then remove from the heat and autosiphon the water out and over top of the grains, keeping about an inch or so of water on top of the grains at all time. Since the water is off the heat, it starts to cool down to the 160 to 170 area while I am sparging. Just for shits and giggles, after all the water was out of the hot lauter pot and I was waiting for it to make it's way through the grains, I stuck a thermometer in the mash and it read 162. Perfect temp to sparge with.
Third, I transferred more wort to the kettle through a strainer than I probably should have, which meant that instead of topping the fermeter off with 1/2 gallon of water, I only had to top off with about an 1/8 gallon.
All three of these factors put together most likely had a great effect on my hitting the numbers.
And the best part was that the taste test was just as I remember the previous batches. Gonna be a good batch of beer.

It's dry hop day. Gravity reading is at 1.010. Done fermenting...hops in and now we wait until next Wednesday to cold crash. As you can see, the clarity was awesome. And the color was perfect for a pale ale. The taste was just as my notes and memory said it should be. So we are right on track for a good repeat recipe. MMMmmm....my house pale ale should be a success!!!

Best of luck on the competition. My recollection of this beer was that it was very enjoyable and I'm sure this one is too.
