Ha, good point, thanks for pointing that out. I'll probably do a PM, but I have a 300 micron SS hop spider thing I can use for the grits during the mash.

Wouldn't flaked corn be better? Less messy. When I think of grit in a boil, I think polenta. That would gum up the works really good. EDIT: If the grits are all bunched up in a small area and turn into a blob of polenta like substance in a spider or a sack how are the enzymes going to get at the "guts" of it?

On another note, I got to try the first of set 2 of the Saisons. This one is pretty much PapaG's Simple Saison recipe with 1 oz of roasted barley steeped to simulate the slight burning of the malt during kilning on the farm. It came out at 5.8% which is closer to my goal, and tasted great. I was able to drink a liter and not fall down :jumpy:

Anyway, I liked this a lot so here's the recipe again:

Batch Size: 2.25 gal
Estimated OG: 1.047 SG
Measured OG: 1.048 SG
Estimated FG: 1.004 SG

Boil Time: 15 Minutes
Color: 11.5 SRM

Also got to try another batch. This one was the Sorachi Red Rye. Well it didn't turn out red, but a amber-brown, almost like a brown Saison. Tasted great, and was 5.4%, so an enjoyable drinkable beer.

Wow, you ask hard questions. It tastes Saisony with a major contribution of what you get with Belle Saison dry yeast. :)

I can't describe it. It is spicy-ish smooth-ish with a slightly bitter finish, but nothing that hangs around. The taste, to me, actually changes as I swallow, it starts out fruity, citrusy, goes to a smooth middle, with a slight peppery bitter finish, then just fades out to smooth, with a hunger for more. I really like it. Sometimes I taste melons, or sometimes lemons.

Overall, the yeast comes first then all the different variations with the taste. I did a stout (basically) with Belle Saison and it is just weird. I don't particularly like it. Right now it is on long term conditioning. I hope my one fiend that likes everything I make will like it, but at 10% ABV, it will take him some time too. :)

Well, I got to try the Hibiscus Saison last night. Weird color, but I really like the taste of this beer. A little high in the ABV department at 5.8%, but I liked it, and my wife liked it too. That says a ton, because she is NOT a beer person.

Thanks BB. That's basically BigPapaG's Simple Saison recipe with 3 oz of Red Hibiscus flowers steeped. Cam out a little cloudy from the wheat and hibiscus, but you can taste Hibiscus, and it kind of fills in the middle opf the taste, if that makes sense. I think it goes great with the Saison-y flavor.

Ok this is the second or third pour of SS3C. This is a more brown-ish Saison. Came in at 5.4% and tastes real good to me.

Trying the ss3f. A SMaSH light dme and belma. Mmmmmmmm....

ok somewhere back there I made a Citra saison. I got to try this one out over the weekend, and man, Citra is great in a Saison. The aroma, taste, and bitter worked wonderfully. First Wort Hop and just a very short boil, like 5 minutes or something. Wonderful taste and aroma. I like Citra.
