A story about patience- I just got back from visiting family in Miami. Usually I would bring homebrew with me but the last few times I did, nobody was drinking it. So this time, I skipped it. Saturday night, didn't know mom was throwing a dinner get-together and they brought a bunch of wine to drink. Me not being a wine drinker, I remembered I left a bottle of Tripel in the garage last time I was down (a big wine sized bottle). It was in their fridge so it was good to drink. Brought the bottle out and started pouring and everyone was wondering what it was. Explained that it was my Tripel and passed the glass around for everyone to try. It was a huge hit! By this point, it had aged for 8 months and had no more alcohol burn, and flavor notes of apricot. It was fantastic! I'm going to brew this again but the few bottles I have left, I'm going to send to family after its been aged a year. Time does amazing things for this beer.

Ardennes yeast is like my second favorite Belgian yeast...

Fermenting a Belgian IPA with it now...

Same type of heavy activity, same type of airlock (half gallon though) day two (pitched it at 5pm yesterday) and I had to dump the blowoff this am.

Will probably do it again tonight to be safe as it's not showing any signs of stopping soon.

Cool breeze! Another yeast I'm going to try out on a future brew.
