I have a thermowell I currently use and there's only 1 hole.
Is that lid too thick to cut a hole in without consulting a professional?

Not at all. In fact, I've been wanting to do that for awhile. Thin stainless but quality work. I've fermented about 20 beers in this thing and love it.
They've really improved things too so you might be able to have them get you a lid with a hole already in it for a thermowell.
