Man, I forgot how much coriander was in this. That's why last time I messed with this it wasn't right. Nowhere near enough did I use, I went off standard WIT beer levels and this has more. And I think I used other stuff I shouldn't have since I was brewing from memory.
Something like 80%pils, 10%wheat, 10% light cassonade sugar, a good bit of coriander and wlp500 would be close. 1.04ish OG. Gonna try it again in the summer.
Coriander haters would not like this. But it's YUM.

Open one of your light colored simple Belgians made with Abbaye (at least Llalamand version) if you have one.
Taste both. Very similar ester/phenolic profile. At least in my one here...
Mine is a patersbier of nothing but pils, 5L candi syrup, hops, and abbaye which I have liked tremendously... and now I know why. It's like mini-duval. I think the beer I made could be a pretty good duval clone with it by just cranking up the pils and sugar (and using plain clear sugar).

When I bought it the checker was shocked by the price but said something about beer as strong as "harder stuff". She asked if I just had a small sip (I assume she meant like a shot glass) and I said no, not so small. But tonight I am just having a little in my wine glass and utilized my bottle capper to recap the rest. Really nice aroma and flavor. I'll have to pick up a few more if any are left.

Jim Johnson's Winter Time... found a bottle (and a few other Nashville meetup bottles) when I was rearranging the beer fridge. I guess these got lost in the back. I really need to rotate the stock better. This held up nicely. Cap says it was from 10/14.
