Golden Monkey Clone?

I have a request to brew a golden monkey Clone. Anybody have any experience with such a beast?

One I've known a friend to make that was pretty tasty. Been a long time since I had Victory's version, so I can't speak to its cloney-ness, but those that had had it recently thought it was a nice representation.

12.5 lb. pils malt
0.5 lb. flaked barley
6 oz. Belgian aromatic malt
4 oz. Belgian biscuit malt
1.5 lb. cane or beet sugar

0.7 oz. Horizon 13% 60 min.
0.3 oz. French Strisselspalt pellets 4% 10 min.
0.5 oz. freshly ground coriander 5 min.

Wyeast #3522 Ardennes yeast

Mash at 150F
OG ~ 1.080
Swenocha is a vast bastard of brewing knowledge - Wings_Fan_In_KC

Fermenting:
nada... zip...

Drinking:
nada... zip... maybe an N/A beer here and there...

Well I went with this recipe pretty much as is with a few minor changes. I used Crystal instead of the Strisslespalt' My local didn't have any and I wasn't going to wait for it. I used clear candy syrup instead of the plain sugar. Also I used Wyeast 1214 and a 2 liter starter (again availability issues) after an hour of aeration I started off at 67 deg and it took off like a rocket, held for a 3 days then I bumped it a degree every other day and held it at 70. I hit my temps spot on and got a OG of 1.086. Its finally settling in at 1.010 after 16 days for what should be just a hair under 10%. The color is nice and golden and smells great.

Question is to cold crash or not before bottling? Anybody?

Cold crashing is really a preference. Will it help clarify the beer? Yes. But so will time in the bottle. Personally I like to cold crash everything to start off with as little sediment as possible getting into the bottles = less to have to settle. At 10% I assume a long conditioning period is ahead so either way it should clear up nicely for you.

Good luck when it comes time to taste.

Thanks.. Yes, at least 30 days in the hole with this one. I have also got in the habit of cold crashing but I never used this yeast before. Don't want to screw this one up, rather expensive (and labor intensive) brew.

I'm with Kealia on the cold crash....I crash everything. I figure an extra 3 or 4 days of cold temps is easy enough to get through in order to help clarify the final product.
