Mosaic Pale Ale - Golden Promise
I have some time this weekend planned to brew again so I can build up the pipeline and I'm going to try to do something similar to Founder's Golden Promise.
This is what I have planned and I'll update this later with taste thoughts, etc.
Style: American Pale Ale

This is a simple recipe, no hopstand, no massive late additions, etc. The last time I did a large late-addition with Mosaic I got an interesting aftertaste from it that wasn't off-putting, but not necessarily something I want to replicate either so I'm going basic additions on this test run.

Really like Nugget for the bittering charge. Can't get anymore simple than that grain bill!

I also like nugget to bitter and while I use mosaic often with others, I agree, it does flavor beers toward the 'I'm not crazy about it' direction. It's great with other hops such as cites.
And, I'm very much enjoying my pale/ IPA with Golden Promise. More body and balance to my taste.

Yeah, my go-to is Magnum but I wanted something that brought a little more to the table. The last Mosaic beer I did that I reference above also has Mosaic for bittering and it's possible that brought the taste I mentioned, too. Swapping out both variables (no massive late addition and a new bittering hop) isn't a very scientific approach.....but this is fun, not science!

Cool, good to know. I'd have to go back through my recipes 1 by 1 but I don't recall using GP before. I had more GP but some I got somewhere (Farmhouse, Morebeer or elsewhere) was full of bugs but I do like this malt.
There's lots going on in my recipe on purpose but while it's not my favorite, it's not because of GP. So far, it's very, very well received but the pale part is wrong due to the Caramunich II which gave it a darker, amber type hue.
If you got the Simpsons brand (not sure who else carries it) you'll notice it vs. 2 row. It adds a very slight sweetness to the malt but nothing cloying at all. Last year I mixed 50/50 with Maris Otter and very much enjoyed it!

It is Simpsons. I picked it up yesterday from More Beer while I was ogling their 5L flask!
I'm going to mash on the low side to keep it "sort of" dry but let the malt sweetness come through. For a simple recipe, I'm pretty excited to see how this comes out - or just anxious to brew again.

I was thinking about dry-hopping this tomorrow and was checking on how much Mosaic I needed. Looking back at the recipe I see none listed and I've realized two things:
1) I'm making a quick run to the LHBS tomorrow to pick up Mosaic
2) Just how disappointed I am in all of you for not picking up that this recipe was missing a dry hop. Shame......

I try not to judge but with this crowd, it's pretty hard.
My Red Placenta got a generous 5 oz of dry hop today with a mix of Citra, Mosaic and Farmhouse blend. So, in a way, I was thinking about you.

I was lucky enough to be sent one of these beers from Kealia, drank it, enjoyed the heck out of it (even though Mosaic is not my favorite hop) and now, just realizing another reason why I like it so much......Golden Promise malt! I've made a few pales with this malt and after trying different yeasts and hops, have tried different malts and realize how they all play such a large part and how altering one or the other or all, can really make us 'regular' homebrewers get to the next level.
I now know when I try something new with hops and 2 row and, it's not stellar, the next step is to use a different malt or malts. I've enjoyed Golden Promise and especially, Swaen and RedX and my beer brewing tours will continue in this way.

This is not a gripe, but it's a simple beer that I think made more complex in it's flavors with a malt like GP. I have ideas now for the 8 oz of Mosaic I have and will work on recipes with it (along with other hops) but I would strongly suggest that for those who have beers they want to take to the next level, switch malts and give it a try. You may need to make other changes and alterations but you will be glad you did.This is very good Ron. Clean, very slight bite when cold but subsides as it warms (though I rather like a mild bite). (that's what she said) There's no mistaking the mosaic at all and though it's not my favorite Hop by itself, you've done a great job with the malts. Not as 'white grapes' as some of my mosaics but this would make a great summer beer.
I really think this could medal!

My favorite beer with Mosiac so far by far was the ESB I made with it and Fuggles. I will do that again.
I didn't like the SMaSH I made with it all that much.
I just made a Mosiac/Citra beer, so I will see if I like that or not.

Thanks for posting your thoughts here. I "like" this beer but what I was really going for was something more like Born Yesterday - in the sense that I wanted something drier. This beer didn't attenuate the way I wanted to and maybe that would have made the difference in what I was looking for. In my own beers, I always taste what I *didn't* get as opposed to what I *did* get but that's just my own pickiness.
Since you've used GP before - is that part of what you are tasting? I think Mosaic as a single hop brings out almost a 'funkiness' that I want to be cleaner. I LOVE Citra and Mosaic together a;a Fresh Squeezed (or anything else, really). I'm going to drink another one of these and try to have an open mind, drinking it and enjoying it in the manner I would if were somebody else's beer.

I definitely notice a 'different' grain than normal and didn't even realize until after I drank it and posted here and re-read your recipe that it was Golden Promise. I think it adds a roundness to many beers though I've only used it 4 or 5 times and many in just under 50%.
And I forgot to add that it was carbed nice.
