How not to make beer

Post by Beer-lord »

Well, you really have to work to screw up a beer but this guy obviously likes the way he does it.
I'd never use soap and boiling water to clean and sterilize my fermenter. But its good enough for him.

Wow this guy is absolutely crazy. It's amazing if he doesn't get or have any infections in his beer. I would guess that everything he brews end up being a sour or at least cidery tasting.

The only thing I can agree on with this guy is his willingness to ignore the numbers. I know that, for some people, the numbers and the chemistry and the science of it is what appeals to them. I respect that, because it's a cool thing, and, hey, whatever blows your skirt up. But I find such discussions stultifyingly dull, so I pretty much ignore everything about it except when it comes to mash/sparge volumes and specific gravity. To me, those are the numbers that count. Everything else can take a flying jump at the moon.

But I do have issues with the sugar addition (you like really dry beer, don't you, guy?), the "sanitation" process :o , and just the fact that this guy seems about as organized as a basket of puppies. STAGE YOUR WORK AREA, for cry-eye! Get your ducks in a row. Plan your work, and work your plan. This guy seems to be just pulling it all out of his a$$ on brew day. And then he uses the excuse that he's vlogging at the same time, so that throws him off. Caca de toro, I say! If you were always organized, it would be second nature, no matter if you're vlogging.

Well, he's in Australia and I'm in New York, so I don't imagine I'll be drinking any of his home-brew anytime soon. Or ever (which, when you think about it, is no time soon). And that's one thing that's going right in my life, anyway.

I wouldn't sanitize like he does, but that said, it was not so long ago in beer making history (much less so then most people think) that doing that type of cleaning of the fermenter was "about as good as it got".

When I first brewed in the stone age, the only sanitizer used was bleach. The beer wasn't too good but I doubt it was from lack of sanitation.

Ha Ha a little different method then most of us are use too, But he makes beer and likes it and that's all that matters I guess. I've never seen it done quite like that before but works for him. We all always say on here there are many ways to brew with no right or wrong way, but whatever works best for you, and he is doing that......

It is a little unorthodox, but if it works for him, well, then it works for him. Sometimes I think we (the homebrewing collective) seem to over analyze things a bit much.

His recipe aside, what's that gunk in his airlock? And where's his krausen supposed to go? I got a kick at the end where he rates the can of beer he's drinking as, "not very nice." It must not have had enough sugar for him. ;)

Maybe a bit of the soap he uses to sanitize his fermenter sticks around and kills the foam.

I will go up to 20ish % of a recipe with sugar, but that's just my inner Belgian/British brewer at work and I do it with some intention that isn't just about replacing malt with something cheaper.

It's become a train wreck. I can't not look. Here's the answer for the krausen, btw.

Like I said, it's good enough for him. His money, his beer, his way.
Not the way I'd suggest to those new to the hobby though.

Ya'll don't remember the "buy a water jug from wall mart, bust it open, pour off a little water, pour in a can of mr. beer, put the lid on, shake the crap out of it, take the lid off, pitch yeast, put the lid on again" lady? That was like the easiest way ever to make beer. No fussing around with anything.
