BD what you think of this? The people I partner with we are doing 9 pigs this year, they use my barn and do most of the work, I like it that way and works good for me. Yes some will be sold but a lot of pork for us. I am already getting low for this year and haven't done much BBQ during the winter but still have a lot of ribs and some roast for the smoker this summer.

I smoked some country style ribs today on my electric smoker and I think I really like this way of cooking, I didn't think I would like an electric one. It is a little lacking if you really want some smoke and I already have the answer but haven't tried it yet. They came out really good though and I cook country ribs a little hotter and faster then spare ribs. Last night salt, pepper and garlic powder. This morning mustard and my standard rub. Started cooking at noon with hickory chips at 250 deg. 2 hours and 10 mins. was internal at 150 deg. put in a pan of Sweet Baby Rays and apple juice and foiled for 1 more hour, then put them back on the grates for another 5-10 min per side and wrapped and ate about 20 min Later. Sorry no pic this time was busy all afternoon and didn't think about pic until after eating.
