did a hobo wine that went like this... used us04 I think, safale (blue env). 68f. 2 gallons chemical free juice concentrate, chaptalized with I think 1-2 cups sugar.
went nutso with fermentation... thick huge purple bubbles on a 1/4 in carpet of tiny purple bubbles. after a couple days everything went quiet and krausen dropped... only to pick up again in a couple days. I had used raisins in with the juice so my guess is, the us04 did the initial fermentation, then wild yeast in the raisins kicked in and ate what the o4 failed to eat for whatever reason. oddly it was my best batch of hobo wine. tried another batch with notty and didn't like the outcome.. way too dry. let it go too long too.
