Yeah, I think you did. I was just surprised at seeing this happen again. On my next batch, I am going to skip the starter and the purging of headspace to see if that changes things (i.e. it doesn't ferment during souring).
I think between now and then I may run a boil of 30 minutes in the M&B with just water to see if there's something lingering around that should be dead. Although, now that I write this....I'm not sure how it would survive the 30-minute boil that I just did.
Or....I just won't sweat it. Between batches of Weiss I did a batch of the Levitation recipe I've done so many times and it came out fine, too. Maybe it's time to just RDWHAHB.
