OK, I need to brew.... for the beer, but more for the therapy. But here's the catch, what's causing me to need the brew therapy is preventing me from getting it. I can't commit to brewing all in one session. I can get the mash done one day, and the boil etc the next morning. Anyone fall into this situation before?
I really don't want to put this brew off any longer....

I have not. But there is a whole school of overnight mashing, and another of no-chill brewing. They simply cover it tightly and let it cool overnight. That's after the boil, of course. But search overnight mash, you'll find reports.

You can't really "no chill" the mash without making a sour mash. To do the no chill you have to do the boil. No chill is more of a "I don't want to use a wort chiller and waste water" or "all my fermenters are full but I want to brew, so I will brew it and then ferment it next week" kind of thing.

The overnight mash is an option as long as you can keep your temps up. If they get to low then you can easily end up with a sour mash - of limited duration, but still a sour mash.

What about doing the mash and chilling then just transfer into a couple of slim lines for overnight in the fridge?

We've been told that as long as sanitation is good wort will keep for several days before you do you your boil etc.?
