Does T-58 usually work super fast?
I just pitched it dry into 70F wort, and took it down to my 67F brewroom. It had good krausen in under 12 hours which is 8-12 hours faster for dry pitching than what I've seen.

My pumpkin ale was going crazy in under 12 hours from when I pitched (rehydrated), if that helps at all.

From my limited experience T-58 is really fast yeast.
I have seen it done in 10days, I still waited to bottle since I had a schedule of multiple LBK's running

Yeah, its gonna sit the full 3 weeks cause I've got 3 staggered LBK's and I'm busy.

T-58 can be fast, but it can also stall short of being done, and then start again later. I had one batch that had stable FG for several days before bottling, then had a lot of carbonation due to starting again of the malt in addition to the priming sugar. It didn't have any sign of infection, so it had to be the yeast restarting.

Yeah, if you seem to be stuck a bit higher then you think you should be, add a bit of sugar or raise the temps and see if it gets going again.
OR just wait for another week. T-58 actually works way under it's suggested temp range, but it works SLOOOOOOWLY. I think it will still work SLOOOOWLY when it seems stuck too.
