I just started mashing an Irish Red and I'm not sure if I have enough chocolate in it to get the desired color.
I already forgot the roasted barley so I'm missing that level of flavor.
Could I add 2 oz of a milder chocolate to help with that?

2 oz of chocolate will work. That is what I use.
