Mosaic and what?

Post by Beer-lord »

I finally got some Mosaic hops and am curious what might compliment these. I don't have Galaxy (which I've read is very good with Mosiac) but have Chinook, Citra, Amarillo, Simcoe, Summit, Nugget, Cascade, Centennial, Helga, Belma, and more I can't even remember..... crap, I have waaaaay too many hops (somebody please institutionalize me).
I don't want to do a SMaSH but am thinking of 2 row and a bit of crystal 60 and some Victory. I'm thinking Simcoe and Amarillo and Chinook is what I might use.

So, anyone who's used Mosaic with something else, chime in. I've got time but I decide and design recipes weeks in advance.

Hi Paul,

I have used Mosaic with:

Simcoe (Mosaic is a daughter of Simcoe)
Amarillo
Citra
Centennial
Styrian Goldings
Hallertau Mittlefrau
Striselspalt

I think it pairs well with them all.

It really depends on how you use it and what you want to get out of it.

For example, when I used it for flavor along with Amarillo and Citra, it tended to compete with the Amarillo.

It should pair well with Belma and even Galaxy.

SPECIAL NOTE: (Don't read this if you don't wanna buy more hops!) I just had a Victory Hop Ranch and it was awesome! It uses only Mosaic and Azacca hops and the taste was great... Fruity but balanced and a good amount of bitter from the Mosaic.

Farmhouse Brewing Supply has it but it ain't cheap. I got 1/2 lb and would have gotten more but I already have way too much in my freezer.

LOL! No way... You ordered some Azacca?

Guess I'll order up some as well... I really enjoyed them in the Victory Hop Ranch!

Thanks for the lead...

I'm going to hold off on ordering any more hops until I can get some help for my hoptomania problem I have. Plus, if I tried to stuff any more in my freezer, the doors will come off.

I got 4 oz of Mosaic at a LHBS event and it's been in my freezer ever since. Don't like IPAs, haven't really looked for a way to use them.
I have over 9,000 posts on "another forum", which means absolutely nothing. Mr. Beer January 2014 Brewer of the Month with all the pomp and circumstance that comes with it...

Thanks. Only wheat I've made has been a Blue Moon clone I made in the summer for my son. After my Moosedrool batch that I'm making next week I'll have to see if I want to make a wheat for the summer.

I used them with Citra in a clone of a brewed called Fresh Squeezed by Deschutes Brewery last Saturday.

Never had it so I don't know what to expect.

Smelled great during the boil.

Got mine from Yakima Valley Hops. They recommended them in place of Amarillo.
My LHBS wants $30 a LB for Amarillo right now and I refuse to pay that for any hop.
They have them right now for $20.99 a LB.
Also, they have a $6 flat shipping rate for up to 4 LBs so I'll usually add some yeast to it too.
