This is huge! The Culinary Institute is a prestigious establishment, and Brooklyn Brewery certainly knows their stuff. Acknowledging the importance of quality craft beers on a menu and in the preparation of dishes is an important step forward.

I am pleased at this development.

That's great news. My neighbor's son went to the CIA and is working in the food service industry in Hawaii.

I don't know if you've been to the Culinary Institute to visit but it is a great trip. When we visited we wandered into a wine tasting class. A large group of students were gathered in a big lecture sized classroom/auditorium. A large tray was passed around that had 5 or so different red wines for tasting.
The school is right on the Hudson river in Hyde Park near FDR's estate.

There are four very good places to buy lunch and dinner on campus. They are Italian,French and America restaurants. Reservations are needed and the food is high end. It isn't cheap but it is less than a similar restaurant in NYC. There is a lunch cafe where you can just drop in. The cafe is great and not expensive. Everything is served and prepared by CIA students.
The Brooklyn Brewery and the CIA is a great pairing!

I've never been there, even though Hyde Park is only about an hour's drive, and we did take a day-trip a couple of years ago to tour the Roosevelt estate/museum.

I'd be very interested in it, especially eating in one or more of the restaurants.

I loved the quote from Garret Oliver that diners know more about the beer than staff. We've all experienced that, though I've seen great improvements.
Making beer and stew for the Zombie Apocalypse.
