Stevia for back sweetener?

Stevia for back sweetener?
I recently started using stevia in place of sugar for some health issues, and when I did some research to learn about the stuff before using it, I noticed that it's non fermentable. Anybody ever try using it as a non fermentable sweetener in place of lactose for ciders, etc? Just curious. Will probably end up trying it in a small test batch before too long myself. Would love to hear other experiences or opinions about it.

No but I am interested in hearing what you find out. I think t would be good, but it's a little different sweetness than sugar. I think it would work ok in a cider. and solve the age old sparkling cider problem.

Exactly what I was thinking, too. Would be awful nice to have that residual sweetness already there when the fermenting is finished. I suppose same thing could be done with lactose, but I haven't tried it yet. Thought this may offer yet another option as well.monsteroyd wrote:No but I am interested in hearing what you find out. I used it or Xytitol in all of my lemonades. Worked just fine for this purpose...

I used Stevia as a back sweetener for a hard lemonade last summer
Didn't use enough initially, but it was pretty good
I did add 1 TBSP at serving and it was very good
I will use it again in a similar recipe in a few weeks but probably about twice as much

I've got that stuff on hand but haven't made a beer that I wanted to use it in. I like it in other things though.

That's an interesting thought. I have a cider that I will be bottling today, I used 1/2 lbs of lactose in it. So I will see where the sweetness is from that.
