Ralph's Tasmanian Wheat

I had some friends over last night after work. I really wanted to serve this beer but I just bottled it Sunday (last night was Friday). I am one to sample my beers shortly after packaging but this is the shortest I have tried yet. Much to my delight it poured with perfect carbonation. The flavor was all that I could hope it would be. I could really taste those Galaxy hops. Plus it has a really nice aroma. But it had more of a bitter bite than I care for. My friends loved it so maybe it is just my pallet. Anyway I am going to brew this beer again. But this time I am going to turn on my chiller until the wort gets to around 170F then shut the chiller off and throw the hops in. That way I should get the flavor without the bitterness.

Then do you just let the wort cool on it's own?

Then do you just let the wort cool on it's own?
Only for the amount of time that I set for my hop stand. In other words, I am using 30 minutes right now. So I would leave the chiller off for 30 minutes then turn it back on and stir and cool as usual.
