We decided on making 2 saisons, 1 a simple saison and one variation. So we are calling the simple one a "Backbone Saison" that we can use as a base for further recipes.

We also decided to skip sugar feedings on the first one. We want to try without, so we can see what we can gain by adding sugar later.

3# Wheat DME
8oz C10
4oz CaraPils
.5oz Citra @10 min
.5oz Citra @5 min
Bella Saison Yeast

Didn't take a SG, I was watching my 1 year old daughter and brewing at the same time, so I forgot.

Its been chugging in my 64 degree basement for 4 days, I will move it to the top of my fridge to get mid 70's to finish.

This is a LBK sized batch

Wow, all wheat. I didn't think of that. Sounds tasty, I like Citra with the Belle Saison yeast. Can't wait to hear how it turns out.

Oh yeah, I guess you're right, I was using wheat dme with barley dme thinking that was the ratio, but you're right the wheat dme is part wheat usually.

I guess if we wanted a full wheat we have go with a Wheat UME? For extract brewing

Cracked open the first one last night, and another one today. This is great! Really happy how this came out.
It has a great aroma, peach/ grapefruit hop taste, and finishes a little peppery. I want to share this with my friends , but I want keep it all for me too. I definately will be making this again.

Aren't they great? I just don't think you can mess up with that yeast. Especially with Citra. Sounds yummy.

I did share some on Saturday night. My friend said it was one of the best beers he has had before.

I am familiar with the Briess CBW Bavarian Wheat LME and it is 65% Wheat and 35% Barley.

Not sure that you can get a 100% Wheat Extract, at least I have never seen one... Yet.
