I pitched my yeast at 3PM. At 6 I went downstairs to do some laundry and heard my blow off bucket bubbling away. That stuff wastes no time.

I used it in my last brew, an Irish Red, and it finished so quickly that I was concerned that it hadn't even performed a full fermentation! But the hydro sample told the tale.

As someone who is a stickler for clarity, I also love the flocculation properties of S-04. If only all yeasts dropped out like that!

That's the same as WLP007, right?

Either way, mine is acting the same although I didn't check it 3 hours later. I checked the next morning about 12 hours in and my blowoff was bubbling like no other. It made me glad I started with a blowoff tube and not the airlock.

They are supposed to be the same yeasts but I swear, I can tell the difference between the 2. For me 04 hasn't been my best friend but 007 has been a good buddy. I have to admit, I've used 007 more than 04 as I prefer to use my stock of harvested yeast from the original liquid version. Neither seem to attenuate as much as I'd like though.

04 has always been right on the money for attenuation for me. Its only downside is that it really heats up while fermenting.

Yes, it certainly does. I'd say about 6-8 degrees more from what I can tell. That's why I start with a lower temperature with 007 than with other yeasts.
