I got home from work and BRY-97 was busy. I mean REALLY busy. I have never seen this yeast put bubbles out of the air lock in less than 2 days before. I have also never seen this yeast this vigorous before. The package only has a few months left before the expiration date so I thought about maybe rehydrating it this time, but by the time I get that far in brew day I just can't bring myself to make that one extra step. Evidently it wasn't necessary

Cool. I haven't tried it (I think). But I love the yeast discussions.

On review, I have used it. I have half a pack. Must have come in a kit, of which I brewed half.

I really like this yeast. It is usually a slow starter and works slow and steady. But it has a nice clean flavor profile like S 05 does. It is great in American Ales

It took 36 hours to start up last time I used it, but then it made a big mess :)

EDIT: and good beer.
