Hefeweizen with witbier yeast?
I'm developing a recipe for a hefeweizen and me, being the frugal guy that I am, thought about putting to use the 3944 Witbier yeast I washed from the Pineapple Wit. I feel like it has to be useful for more than just a witbier, and since it gives a cloudy appearance the way hefeweizens are, I thought "why not?" Are there any key differences between the two strains that would make it unfeasible?

Both are designed for wheat beers... Both are low flocculating, top cropping strains.
The 3944 Cellis yeast however, is more phenolic and produces less esters so you won't get the banana vibe like you would with the 3068. Think Hoegarten instead of Kellerweiss.
So, it will be a sharper, more phenolic taste that you could add some crystal or caramel malts to, but it won't be what is classically known as a Hefeweizen, even though it will be a wheat beer with yeast... Go figure! LOL!
It should still be a very good beer though!

Damn... the banana is what I'm looking most for. Guess I'll have to just suck it up and spend the money on new yeast. I'm pretty set on the malt bill as a pretty classic bill at the advice from literature by Jamil Zainasheff. The hops will be a little less traditional, yet not too far off from the norm. Having perfected my recipes for a couple other styles, I want to add hefeweizen to my repertoire as a classic, must-have style.

No prob...
You could run it at the upper temp limits to get more esters... But I just don't think it will be what you are looking for.
Make a nice citrus wheat with it to close out the summer!
