Wanted to turn over the fermenters quickly, as my pipeline took a hit. So I made stuff with what I had. This is what I had.
For 5.25 gallons:
1/4# Honey Malt Steeped
6# MoreBeer Extra Light LME (2# up front, 4# late addition @10 minutes)
1# MoreBeer Dry Rice Extract (malted rice sugar, added up front)
60 minute boil
1/2oz Northern Brewer (7%) @60
1/2oz Northern Brewer @20
1oz Mount Hood (5.4%) @2
Cooled, split between 2 LBCs, topped up each LBC to 8.5Q mark, pitched full pack of S-23 in each, will ferment 57-58ish.
Sample before I pitched said 1.049.
I love Northern Brewer and Mount Hood, so I know will be easy to drink, even if it is perhaps a tad too hoppy to be a real cream ale.

Bottled this at 1.009. Tasted nice. Will be easy to drink in large quantities.

Popped open a trub bottle. Even though this was done with lager yeast, and hasn't been lagered at all yet, it's quite nice to drink at this young age. Some lagering/time will totally smooth it out, and it will be very much a cream ale like substance.

I, too, make a cream ale like substance. I don't much care if it's strictly to style, because I like it. Light and fizzy. Very refreshing.

I drank my other trub bottle which I let sit in the fridge longer - I'm quite happy with how this turned out for such a simple beer. Very easy to drink, will be just the thing for after a run or bike ride or swim. If it last that long. The NB/Mt. Hood combo is really nice, even if it has a bit too much hop flavor to be to "style".
