Evil One Pilsner questions
Is this one ok on its own, or does it need dressing up? I have a 3.75lbs can, it will be going into a LBK. So its going to be on the strong side already. I have some pale, and some light malt, with and 1oz of Saaz in stock. But I am a little worried about adding more malt to do a hop boil. Will steeping some hops be fine, or should I just go with it the way is? Thanks for any advice.

I've not made a Brew Demon recipe, so sorry can't be of any help there.
But the advise given to me when I first started with MrBeer, was brew the recipe straight up first. That way you get a knowledge of what the base beer is like and can tweak or go all Mad Scientist from there.
A quick look in BeerSmith has that much LME at a SG of 1.054 if you do 2.5 gallons in the LBK. That's close to the upper limits for style. So I don't think I'd add any more LME.
Saaz are a Nobel hop and a good match for the style. I think steeping .25oz for about 10 minutes would bring a nice floral nose to the beer.
Keep us updated on what you do and how it turns out.

I can't help too much. I brewed it once straight up, and it was decent. That was a couple of years ago, and I had a lot to learn.

@tekn50, a few reasons I ask for you to follow up with your results.
One is we all what to know what you did and how it turned out (good, bad or just ok). I feel more people have learned from me posting my mistakes than successes.
The other is for the next new brewer that is lurking, reading soaking up knowledge looking for answers. The more information we can put here, the more we can help all brewers.

I hear ya Ink. I'm still learning (I hope!). But I noted that I did that brew early on to point out that my results were flavored by my ignorance. Now I have no excuse!

It should be fine as-is. It's the old recipe from Mr Beer that a number of people really liked. I tried it once when I got a really good discount on some BD stuff but mine turned out wrong. It was really by first bad batch. And by "wrong" I mean that something was off with this batch, not that the recipe was no good.
Although thinking back, a number of people did comment in that thread about getting the same weird celery flavor that I was picking up in that one.

I don't have my notes on me, so I can't be sure, but I think a added a Saaz hop addition at 5 min and did a steep with some carapils. As I recall this one came out darker in color than I was excepting. I will look back at my notes and give the particulars.

Ok, so here's the additions that I made for this batch.
4oz Carmel Wheat -German
2oz Breiss 10LV Crystal (2 row) Domestic
2oz M&F Cara Pils (2row) British
steep for 30min
.5oz Mt. Hood Hops for 10min
2 cans BD Twisted Monk Witbier HME at flameout for a 2 gallon batch
The 4 oz caramel wheat and 2 oz crystal 10 explains the "darker than expected". Ahh well, it was my ninth batch.

I am new to brewing... and bought the Brewdemon signature kit... it came with One Evil Pilsner. My question is, do I need to use both yeast packs that come with it? I noticed that each can had a yeast pack and so I put both in at around 70 deg... did I put too much in or is this normal?

You're good to go. I think that if you got two packs, pitch them both. It's hard to over pitch.

Thanks for the update... I was just getting nervous when all the "fun action" has slowed and thought that I might have done something wrong... I am planning on doing my primary for at least two weeks, then bottling. I would eventually like to move to a portable keg system like this.

2 weeks is a good rule of thumb. Don't worry if it goes a little longer either.
It's good to have goals and that little system looks great for parties, BBQs, etc.
