Belgi-Merican IPA (Extract w/ Steep)

Had some three year old (three years past the expiration date) T-58 that I wanted to use up so...

Threw this together today...

Should be good... Haven't made a West Coast style American / Belgian IPA in a while so I'm looking forward to it. :jumpy:

OG: 1.059 SG FG: 1.014 SG

IBUs: 47.0 IBUs Color: 7.6 SRM

Ingredients:

5.00 gal WNY Water (2014)

2.0 oz - Carafoam
Steep prior to boil (1.4%) - 2.0 SRM

2.0 oz - Caramel/Crystal Malt - 20L
Steep prior to boil (1.4%) - 20.0 SRM

1.0 oz - Biscuit Malt
Steep prior to boil (0.7%) - 23.0 SRM

3 lb - Pilsner Liquid Extract
Boil (34.0%) - 3.5 SRM

8.0 oz - Dememera Sugar
Boil (5.7%) - 2.0 SRM

1.00 oz - Willamette Hops
Boil 25 min (8.6 IBUs)

1.00 oz - Citra Hops
Boil 20 min (19.7 IBUs)

4 lb 8.0 oz - Pilsner Liquid Extract
Late extract addition: 15 min (51.1%) - 3.5 SRM

1.00 oz - Cascade Hops
Boil 10 min (5.7 IBUs)

0.50 tsp - Yeast Nutrient
Boil 10 min

1.00 oz - Centennial Hops
Boil 2 min (1.9 IBUs)

2 pkg - SafBrew Specialty Ale
DCL/Fermentis #T-58
[Since it was pretty old, I used both packs... Probably overkill but that's ok, it won't be over-pitched due to it's age.]

8.0 oz - Candi Syrup, Medium (D-45)
Add after day 3 of Primary Fermentation (5.7%) - 45.0 SRM
