FOUND: First Aid for Fermentation Fever

Ruination clone (v1.21): now pouring from HM's pipeline
10 weeks in the bottle ... plenty'o conditioning time
Simple recipe: pale ale malt + low SRM crystal + Centennial + WLP002 (target fermentation temperature: 65°F - 68°F)

The Trubble: fermentation chamber inattention ==> run-away fermentation temperature (72°F ambient) @ Hi-K.
Predictable results: off flavors (sour / astringent)

Intervention: tastes much more better when poured over freshly dried Centennial cones

Interesting. I'll pick my Cascades soon, but don't have a brewday planned. I might try pouring my mediocre APA over some.

I put 3-4 cones in a 12 oz pour and use a fork to get them submerged.
The cones work their magic until the liter is empty.
