A couple of years+ ago I did something stupid. I sanitized and juiced some 7-8 watermelons... 5 gallons of juice worth... and pitched some Wyeast 3763 Roeselare Blend into it. That is a wild blend of 6 different strains. I cannot remember the OG-FG. All that was lost with the MBF forum. It did come in at approx. 9% abv. This stuff was junk. It was absolute, indescribable junk. The pellicle refused to yield for 2 yrs. I kegged it up anyway, chilled, and carbonated. Shortly thereafter I declared it a dumper.
Well... I lied. It is the goofiest, wildest, weirdest type of funk that just makes you grin. It is so tart it'll make you pucker until it hurts. Ironically, it looks simply like beer although there is zero grain in there. That stuff was gallons of watermelon juice. I have no idea what the watermelons bring to this drink. I have no idea what Wyeast 3763 is supposed to bring to a beer. I will drink it one glass at a time until gone. I have zero intentions of ever doing it again. Too much work. Too long of a wait. It's good right now though.

I did my first Sour using 3763. There were ALOT of things that went wrong. Bottled it a month ago after 18 months. It's ok, but defiantly not up there with the one I did with ECY20. That Sour is fantastic.

FWIW, pellicle may never yield. It depends on a lot of factors. It forms to keep excess oxygen away from the bugs/wort. If the bugs are awake and there is oxygen present, there can always be pellicle. Sometimes they rise and fall with the seasons. That's mostly due to temperature fluctuations that make the bugs sleepy.
I bottle my Brett beers from under the pellicle all the time, once I'm sure the FG is stable or at least "near stable" (as in maybe it might drop a point or two over the next year, so I just bottle with less sugar).
