Yup hate this hme its official...lme pale dme pale 8 weeks condition....still tastes as cidery as my first ever batch that only had 4 weeks of conditioning

It needs hops in a bad way. Make sure to add some for a flavor boil. Since the HME provides little flavor, your beer will come out tasting very very hoppy if you add some.

Fantastic....
Was my 2nd ever batch (after CAL), and it's conditioned now for only 3 weeks. Looks to be a looooooong wait I guess.. (not that I won't imbibe before for experimental reasons)
Good thing Bewitched Amber Ale Deluxe is in the LBK right now or I might implode.
Come to think of it, I may implode anyway as I'm at least a month + out either way. No pipeline yet.

Refractometer samples while an agave cerveza was brewing suggested to me that Aztec could be good for fruit beers - so I will try one coming up.

A pound of a light dme and some agave or lime REALLY helps this HME. Adding some peppers in the boil, or after flame out adds a nice spice to it also. I have noticed when you start adding body to the brew the cider taste is gone much sooner.

I have done this with agave and limes because the hme by itself lack something. I have heard fruit could be a good pairing Mr. Beer has recipes with raspberries and also boysenberries.

I have a can of this and a can of Classic American Light left on the shelf and am considering doing both as raspberry. My experience in using fruit - blueberry, raspberry, and cherry - is that the raspberry is MUCH stronger and therefore more enjoyable than the two other fruits. I'm also considering using my last can of the new Oktoberfest with raspberries.
I have made:
Firecracker Red - which uses the old High Country Canadian Draft with a can of cherries, honey and cinnamon. Found the cinnamon made stomachs churn a bit.
St. Valentine's Cherries in Honey - same as above, lose the cinnamon. Ok, not great.
Blue Patriot - Patriot Ale with two cans of Blueberry. Ok, not great.
Raspberry Lager - uses old Oktoberfest with Raspberries. Excellent.

I'm considering trying the Cerveza with blueberries, maybe as winter approaches and I expect a lager-like result. But my experience twice so far with blueberry is that I may need to supplement it with a small amount of flavor extract at bottling to have a recognizeable blueberry flavor.

fwiw. i did the cerveza and added 1 pack lme robust, and i thought it made a fair imitation of a negra modelo. it took 6 weeks to condition out proper, longer would've probably been better.

I made a steam beer out of my award Aztech. I think I just added some steeped crystal, 1# of DME, and some Northern Brewer. I used white labs California lager I think. It actually came out quite good.
