In search of Simcoe IPA recipe
I'm in the mood for something dank in the pipeline so I'm looking for a tried and true Simcoe IPA or even a good Pale Ale recipe. It doesn't have to be single-hopped, but definitely looking for a Simcoe presence.
I could take one of my recipes and just swap in some Simcoe....but maybe I'm lazy today. Anybody want to share their recipe?

Do a search for the Simply Simarillo recipe that Paul and I did. It was awesome. It used Simcoe and Amarillo.

I agree on that option. That's going to be a regular in my pipeline.
I have toyed with doing the one below again that I've not done in years. I brewed a 5.5 gallon and a 2.5 gallon batch and never brewed it again. It was not very dank but had a nice malt/hop balance and was much talked about at the time I did this.
It was one of my first recipes I made myself after buying many kits and copying many recipes that others did online. At the time I was worried about both the FWH AND 60 minute addition but it worked out fine. And with only 3% C60, it fits those that have problems with adding crystal in their DIPA's (though that never bothers me at all cuz I'm a rebel).
You could switch the Cascade with Columbus or Centennial. I made notes that I would increase the dry hops to 4 oz total splitting half with Simcoe and Cascades.

That's a good call. I see I could go heavier like Paul or lighter like Chris. Simcoe and Amarillo is never a bad combo either.

I did it as a normal IPA and also as a Session IPA. Both were outstanding.

If you want Dank and Malty (not west coast) look up my Bier von Apollo recipe, and swap some Simcoe for some of the Apollo and dry hop some Simcoe too. And maybe add more Simcoe just because it's Simcoe and you can. Or just use all Simcoe. I guarantee Simcoe will be awesome with that grain bill. So would Simcoe + Mosiac. Or Apollo + Simcoe + Mosiac. Apollo will help make it good and dank and dopey though. So if you want dank, I'd leave some of that in there. That grain bill can handle a lot of IBUs. The Apollo I used the first time was almost 17.6% AA or something like that (and so oily in other ways that it left a yellow oil slick on top of the wort). So proportionally you could use 2x much Simcoe and be fine. Or even more! Pile it on!

Maybe I'll keep things simple and do a Red X + Simcoe beer and kill two birds with one stone. Ugh, too much time to think about this.

You sound like me not being able to make up your mind because we have so many awesome options. That's why I ordered another 12 lbs of RedX.
