Fell asleep before the boil,
no idea how long I was out...
suppose to be a 30 min boil so I added hops accordingly after i woke up .
Can I just add top off water as I need it to make SG?
This sucks!
Now what do I do....

I top up often, without any concern. Only weenies worry about such things (not saying YOUR a weenie... but anyone who tells you it's a bad thing is). Heck, I think some of the big macro brewers brew a strong concentrated wort and then top up to get to their intended volume. Lets them make more beer with less stuff.

Took a gallon by plastic bottle measurement to get to SG.
This may not be a very good brew, just happy it's a blonde ale.

I must have miscalculated my measurements this morning. Or else I'm still not getting the hang of what my first runnings will be from this new mash tun. But anyway, I added a whole gallon of water to the pre-boil, knowing I'd lose it during a 60-minute boil. My post-boil volume and OG were perfect.
