I brewed a fiver of Copperbottom Lager on Sunday. Pretty good fermentation going on for the past couple of days. Not terribly aggressive, but good krausen and bubbling every one or two seconds in the blow-off. Set the lager fridge to 50 degrees. I was pleased with it.
When I got home from work today, I checked on it (I've been checking it every day). Still some krausen, but I could tell it was falling, and the blow-off wasn't bubbling regularly. Took a reading, and the sample was kind of foamy. But I figured it was a little lower than 1.020. My target FG is 1.013, so I figured I was close enough if I set the fridge to 60 and put it back to bed.
I'll check the temperature tomorrow so I can begin monitoring the D-rest time. I have a pretty good feeling about this. Should be a nice, 5% amber lager. Good for the holidays!
