Pickled egg time

I usually make pickled eggs around Easter time but make them a lot for Thanksgiving also. My hens are laying pretty good and had an excess of eggs, but still a little small as they are young and just started laying. Usually my wife boils them and I make the brine, this time I boiled and I think she has been over cooking them all these years. I brought them to a boil for a minute or so and let them set covered for 15 and then cooled in a ice bath. The Yolks were cooked but not over. I won’t tell her she has been doing it wrong for a long time, that’s not a good thing to do.
