I read an article about Tepache somewhere? may have been a face book thing.
So I tried it. Thought it might be a good mix with spiced rum this summer
Been "fermenting" 4 days but I didnt really notice anything happening till this morning
I think 3 - 4 days is supposed to be max time
Anyone else have any experience with Tepache?

How did this turn out? I did not know what this was so I googled it. How did you make it and did it come out good? I like a good pineapple, I think I would like this for a fall/winter warmer-upper with some rum, or vodka, etc.

I've made some gruits, and I once made a "beer" that was bittered entirely with either orange zest or orange extract (long time ago, so I forget which). But that's as experimental as I've gotten.
The professor has made a number of traditional brews. Maybe he's done this. If not, he may have some input on traditional brews in general.
