I'm really dying to get some baby back ribs and getting my smoke on. Still a little early, though. It's been a little too chilly in my corner of New York to spend six hours fussing with a smoker. Soon, though.

Anyone else getting the itch for some Low 'n' Slow?

I always have that itch. But lucky for, I can pretty much smoke anytime down south.

Well, I've been known to smoke a couple racks on New Year's Day. And I've smoked a turkey for Thanksgiving, too. When it's bitter cold, I hold off, and we've had our share of very cold weather (plus a mess of snow all at once this year).

My biggest problem is that my wife and son aren't really big fans of ribs (the weirdos), so I wind up smoking a couple of racks, eating half of one, and vacuum-sealing the rest.

Well, since you have a vacuum sealer, seal, freeze and ship their share to me. :)
How can someone not like ribs? I hope you shame them about it. You just can't let that go. Next, they won't like hops. I personally couldn't stand for that either!

I have been waiting to do more on my new pellet rig I got for Christmas but managed to pull off a couple cooks. I got another chance again today as it was in the mid 60's- 68 and I did a 11 lb turkey fired up at 3:30 this morning. Can't wait for our short season of great summer in NY.

4 racks baby back ribs this weekend.
Was amazing.
Next weekend back in mid 50s soooo ... we'll see
