Never mind Screwy. I looked it up and I see that it halts fermentation. Would not work with my process.

For my Pineapple Pale Ale I added Dole canned pasteurized juice. Racking the fermented beer off of the yeast and dosing it with potassium sorbate and potassium metabisulfate preserved the pineapple flavor and sweetness. Due to space limitations, I still brew exclusively in 2 gal batches. And since i drink most of the beer I make, it's a good volume for me as well. Plus if you end up making a stinker batch, you don't have to choke through 5 gallons (not that I have ever made a stinker batch).

Just an update in case anyone cared. This came out as a bit of a mixed bag as far as I'm concerned. As I mentioned, I used maple sugar oats in the mash, and the finished beer does have a nice subtle maple aroma. However, the taste is a bit too sweet for me. I've only used them in one recipe, a saison. I used them at 20 and 10 minutes. I like this recipe a lot and get a great, white grape flavor and aroma out of them. Almost like a wine for me. I bittered with falconers flight, so could't tell you what adding earlier would do. Good luck.
