Got that at a Kwak event at a local brewery taproom. According to the Kwak website: “In Napoleon’s time, Pauwel Kwak was a brewer and the owner of the De Hoorn inn (near Brussels). Mail coaches stopped there every day, but at that time coachmen were not allowed to leave their coach and horses,” “As a result, the inventive innkeeper had a special Kwak glass blown that could be hung on the coach. In this way, the coachman had his Kwak beer safely at hand.”

Side note... Need to add a Kwak stand into my car... ;)

I did it as per. but did change the yeast schedule a little. 05 at 65 deg. and later next day with some good active going on , pitched the 34/70 and took it down to 55 degs. for a couple weeks and let it go back up to finish, yes came out as a cream ale taste . I like

Hahahahahahahaha… I just bottled my beer with Bella but it started off at 1.05 not 1.08. I did 1.08 with it once, which was great until the next morning LOL.

I'm drinking 3 different Belgians that started off all as the same Belgian. See my other post.

Forgot to post this last night. This is the first pour of the Blonde Ale. Did a quick carb method and it worked perfectly. And the beer was scrumdillyicious!!! This recipe will most likely make the permanent rotation.

I'm drinking that Simcoe Saison I made with the Yakima Chief "American Noble Hop" version of Simcoe. IE 3.2% AA and mellower.

So what I can tell you now about that hop is that mellower is like... waaay mellower. I don't think I would know this beer was made with Simcoe if I had not made it myself. It has a very nice flavor, but it *is* much more like I used a true noble hop. It is a lot like if I had used French Aramis, IE Streisselspalt with a little bit of citrus, except for a hint of tropical fruit essence thrown in as well.

This is actually more like a true Saison then a very dry APA, which is what I thought it would taste like.

Not that I mind, I like this kind of beer. But I would not recommend anyone use that hop as a late addition thinking they are going to get a bunch of Simcoe flavor/aroma without the bitter. It is *not* like that at all.

This Red Neck Blush that brewnewb posted on quite a while back has been one I have kept on tap. It won't win any prizes at a fine wine tasting event but it sure kicks ass to Boonse farm from the old days.
