Well I bottled yesterday, the beer smelled fantastic. A pungent melon aroma comes through, and the taste is tangerine/citrus with a nice light malt backbone and the color is a cool bright orange/yellow mix. Westvleteren 12 was certainly the most expensive beer I have ever bought. But I did split the cost with another person, unfortunately that meant I had to share :drunk:

So fermentation finally kicked in around early Tuesday, and got very agressive. It has slowed down dramatically so I went ahead and checked the gravity. It is down to 1.014 already, so I am going to let it sit another day, and then begin dry hopping on Monday, with hopes of bottling on Thursday or F...

I would even say that the boil has it's role in flavor development, depending on how aggressive you boil, the length, etc.

The brew day went great, and the hops smelled DELICIOUS! I put the beer away in the fermentation chamber and let it sit. I came in to check on it about six hours later to make sure it hadn't gone anywhere, only to find that my fermentation chamber went on the fritz and cooled all the way down to 44 ...

Will do! I actually just had a beer by Victory today called Hop Ranch, which has a hop in it called Azacca. It lent quite a pleasant pineapple flavor and aroma to the beer. I had never heard of that hop before trying this beer

Alright, hops have been ordered (Motueka, Hull Melon, Mandarina), and grain bill will be kept the same. Thanks for the advice guys! I will pick up the grains tomorrow and hopefully brew this up on Sunday! Whoops, never mind, have to wait until the hops get here :razz:

I think I will drop the pilgrim and just stick to the Mandarina, Hull Melon, and Motueka. BlackDuck that recipe does sound tasty! Should I also drop the crystal or the munich to let the hops shine through more, or keep those in?

Thank you all, it is my pleasure, I have always wanted to join the military and now is the time. Playing around with experimental hops or hops I haven't used does sound interesting, I think I will try that out! Here are the varieties I am thinking. Should I use them all? Or try a select few of them ...

I can honestly say I haven't had a bad beer yet from Evil Twin. Even More Jesus, I Love You With My Stout, Even Less Jesus, Lil B, and more are all phenomenal in my opinion

We were all surprised the beer tasted good! I guess they didn't do any one thing overboard like usual (most caloric beer, beer with swamp water, etc.). This just tasted similar to a toned down mint julep in beer form

Well the filming was tonight. It was a lot of fun, and the beer was actually really good. Being in Kentucky, of course they made a bourbon barrel ale, with the addition of mint to incorporate the mint julep aspect of Louisville, and then the base beer was a Scottish ale since the brew dogs are from ...
